White Chicken Chili
This is one of our favorite soups. It works great to put it in the crock pot on a busy day and have it ready to eat when you get home! We love it with mozzarella cheese and tortilla chips~ Melanie
White Chicken Chili
2 cans chicken broth (note from Melanie~ I only use 1 can or 1 1/2 cans. 2 just makes it too runny for us)
1 cup chicken cubed or shredded
2 cans white beans
1/2 onion chopped
3 cloves garlic
1 can green chiles
2 tsp cumin
1/2 tsp chile powder
1/2 tsp onion powder or to taste
1/4 green pepper
1/4-1/3 cup cream or fat free half and half
Cook chicken in 1 TB olive oil take out of pan and saute onions, peppers until just translucent, add everything else into the pot including the garlic cloves chopped. Let simmer for 30 minutes. Right before serving add 1/4 cup of cream to the soup and serve with limes, chips and mozzarella cheese if desired.

ReplyDeleteWe made this a few days ago and everyone loved it- best of all it turned out using dehydrated onion, red & green peppers, home cooked white beans (the fast method with boiling water and the crockpot), canned chicken, and garlic powder! Hooray!
